"Enjoy a flavorful summer harvest by grilling veggies in foil with olive oil and herbs."
Ingredients:
  • 2.5 pounds new potatoes, thinly sliced
  • 1 large sweet potato, thinly sliced
  • 2 Vidalia onions, sliced 1/4 inch thick
  • 0.5 pound fresh green beans, cut into 1 inch pieces
  • 1 sprig fresh rosemary
  • 1 sprig fresh thyme
  • salt and pepper to taste
  • 0.25 cup olive oil
Instructions:
  • Heat the grill to high temperature.
  • Combine new potatoes, sweet potato, Vidalia onions, green beans, rosemary, and thyme in a large bowl. Toss with 2 tablespoons of olive oil, salt, and pepper until coated evenly.
  • Wrap 2 to 3 layers of foil to create your foil packets. Brush the inside of the packets generously with the remaining olive oil. Divide the vegetable mixture evenly among the packets and seal them tightly.
  • Grill the packets over high heat for 30 minutes, turning once, until the potatoes are tender.
