Try our easy grilled foil-wrapped potatoes and veggies for a quick, tasty side dish. Prep in 10 minutes before grilling for maximum freshness and flavor. Pair with your choice of protein for a perfect summer meal. Bonus: foil helps veggies stay tender and makes cleanup easy!
Ingredients:
  • 2 medium Yukon gold potatoes, cut into 1/8-inch slices
  • 1 1/2 cups baby-cut carrots
  • 4 ounces green beans
  • 2 tablespoons butter or margarine, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano leaves
  • 1/4 teaspoon garlic pepper
  • 1/4 teaspoon ground cumin
Instructions:
  • Prepare the grill for direct heat. Generously spray a large 24x18-inch piece of heavy-duty aluminum foil with cooking spray.
  • Mix all ingredients in a spacious bowl. Transfer the mixture onto a sheet of foil. Fold the foil over the vegetables, ensuring the edges meet. Seal the edges by making a tight 1/2-inch fold and then folding again. Leave room on the sides for proper circulation and expansion during cooking.
  • Grill the covered packet over medium heat for 20-25 minutes, turning halfway through, until vegetables are tender.
