Speed up BBQ ribs by wrapping in foil and grilling over wood chips for quicker, tender, flavorful results.
Ingredients:
  • Rub:
  • 1 tablespoon kosher salt
  • 2 teaspoons paprika
  • 2 teaspoons granulated garlic
  • 2 teaspoons dried thyme
  • ½ teaspoon ground black pepper
  • Remaining Ingredients:
  • 2 racks baby back ribs, each 2 to 2½ pounds
  • 1 cup hickory wood chips, soaked in water for at least 30 minutes
  • 1 cup prepared barbecue sauce
Instructions:
  • Heat the grill to medium heat (350°F) for direct cooking.
  • Create the rub: Combine salt, paprika, garlic, thyme, and pepper in a small bowl, mixing well.
  • Get those ribs ready: Peel off the membrane from the back of each rack of ribs, then slice each rack in half crosswise to form two smaller racks.
  • Evenly coat each half rack with the flavorful rub and then carefully double-wrap each one in its own foil packet using eight 18x24-inch sheets of heavy-duty aluminum foil.
  • Prepare the grill by cleaning the grates. Grill the ribs over direct medium heat with the lid closed for 1 hour, turning occasionally for even cooking. Be careful not to pierce the foil packets.
  • Rest for perfection: Allow the grill packets to cool for 10 minutes. Gently unwrap the foil packets, take out the ribs, and dispose of the fat and foil.
  • As the wood chips begin to smoke, place the ribs back on the grill, bone side down. Grill over medium heat with the lid closed until sizzling and lightly charred, basting with the sauce. Rest for 5 minutes, then slice into individual ribs and serve with extra sauce. Enjoy and don't forget to leave a review!
