Grilled foil-wrapped potatoes with cheese and creamy mushroom sauce - a delicious twist on classic scalloped potatoes!
Ingredients:
  • 8 large baking potatoes, peeled and diced
  • 1 bunch green onions, sliced
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 1 cup shredded Cheddar cheese
  • black pepper to taste
  • garlic salt to taste
  • 0.5 cup crumbled crisply cooked bacon
  • 0.5 cup sauteed mushrooms
  • 0.5 cup butter
Instructions:
  • Preheat the grill until it reaches medium heat.
  • 1. Coat 8 pieces of aluminum foil with vegetable cooking spray. 2. Mix potatoes, green onion, soup, cheese, (and bacon and mushrooms if using) in a bowl. Season with salt and pepper. 3. Distribute the potato mixture evenly among the foil squares. 4. Top with butter. 5. Seal the foil tightly to create packets.
  • Grill the foil packets for 12 to 20 minutes, or until the potatoes are tender.
