Colorful homemade rainbow cupcakes, a hit for all ages at parties with their vibrant appearance and irresistible taste.
Ingredients:
  • 2.75 cups all-purpose flour
  • 4 teaspoons baking powder
  • 0.75 teaspoon salt
  • 4 large egg whites
  • 1.5 cups sugar, divided
  • 0.75 cup unsalted butter, softened
  • 1.5 cups milk
  • rainbow food colorings (red, orange, yellow, blue, green, purple)
Instructions:
  • Preheat the oven to 350 degrees F (180 degrees C) and prepare 18 muffin cups by lining them with paper liners.
  • Triple sift the flour, baking powder, and salt together for extra lightness. Keep aside.
  • Whisk egg whites until foamy in a bowl. Slowly incorporate 1/2 cup sugar while continuing to beat until soft peaks form.
  • In a separate bowl, beat butter until fluffy for 2 to 3 minutes. Gradually add 1 cup of sugar and cream, mix until light and fluffy for about 5 minutes. Alternate adding sifted dry ingredients and milk gradually, beating after each addition. Stir in vanilla, then add egg whites and mix thoroughly.
  • Prepare 6 bowls and add 1 drop of different food coloring to each. Distribute the cupcake batter evenly among the bowls and mix until the coloring is well blended. Adjust color by adding drops of food coloring until desired hue is achieved.
  • Spoon the first colored batter into the bottom of each cupcake liner in the pan using a tablespoon. Spread gently to the edges to create an even layer, then repeat with the remaining colors.
  • Bake the cupcake in the preheated oven for about 20 minutes or until a toothpick inserted into the center comes out clean. Allow it to cool briefly in the pan before transferring to wire racks to cool completely.
