Cedar Plank-Smoked Salmon

Enhance the delicate flavor of salmon by lightly smoking it on a cedar plank over live fire for a delicious smoky finish that preserves its shape.
Ingredients:
  • 0.5 cup unsalted butter
  • 3 cloves garlic, peeled
  • 3 sprigs fresh dill
  • 1 teaspoon salt, or to taste
  • 1 pound salmon filet
  • 1 plank food-safe wood, such as untreated cedar or alder wood
  • 1 lemon, thinly sliced
  • 2 sprigs fresh dill, or more to taste
Instructions:
  • Preheat the smoker to 250°F (120°C) as per the manufacturer's directions.
  • In a heat-proof dish, mix together butter, garlic, 3 sprigs of dill, and salt. Smoke until the butter is melted and infused with flavor, about 20 minutes. Take it out of the smoker.
  • Place the salmon on the wooden plank and generously brush with flavorful butter. Season with salt and pepper before transferring to the smoker, then close the door.
  • Bake salmon for 40 minutes until fork-tender, basting with butter every 10 minutes.
  • Garnish with lemon slices, the rest of the dill, and the remaining flavored butter before serving.
