Cedar plank-smoked mashed sweet potatoes served on a rustic plank for a unique smoky flavor.
Ingredients:
  • 0.5 teaspoon butter
  • 5 sweet potatoes
  • 2 tablespoons grated Parmesan cheese
  • 0.75 cup plain yogurt
  • 0.5 bulb roasted garlic, minced
  • 1 untreated cedar plank, soaked in water for 2 hours
  • 1 tablespoon melted butter
  • salt and black pepper to taste
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped onion
  • 1 pinch paprika
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) then generously rub the soaked cedar plank with 1/2 teaspoon of butter to enhance the flavor.
  • Pierce sweet potatoes with a paring knife several times to a depth of 1/2-inch. Microwave on High for 8 to 10 minutes until soft. Peel and place in a mixing bowl. Add 2 tablespoons butter, 2 tablespoons Parmesan cheese, yogurt, and roasted garlic. Mash until smooth. Mound on cedar plank.
  • - Bake until the potatoes develop a golden brown crust, typically around 30 minutes in the preheated oven. - Drizzle with 1 tbsp melted butter. - Season with salt and black pepper to taste. - To serve, sprinkle with parsley, onion, paprika, and the remaining 2 tbsp Parmesan cheese.
