Cedar-Planked Brie and Berries

Grilled brie on cedar plank marries smoky, mild cheese with sweet fruit perfectly.
Ingredients:
  • 1 untreated cedar plank (about 15x6 inches)
  • 1 small round (4 1/2 oz) Brie cheese
  • 1/2 cup diced mango
  • 1/2 cup fresh raspberries
  • 2 tablespoons honey
  • 10 slices (1/4 inch thick) baguette French bread
Instructions:
  • Submerge cedar plank in water for a minimum of 30 minutes while preheating gas or charcoal grill.
  • Take the plank out of the water. Place the cheese (in its rind) on the plank. Spoon the mango and raspberries over the cheese. Sprinkle with salt.
  • Grill the cheese on a plank over medium heat with the grill covered for 15 to 20 minutes until the cheese is warmed through.
  • Take the plank off the grill and plate the cheese and fruits. Drizzle with honey and serve with bread slices.
