Foil-wrapped swai and asparagus: tender fish atop buttery lemon veggies.
Ingredients:
  • cooking spray
  • 1 stick butter, divided
  • 1 bunch fresh asparagus, trimmed and cut into bite-sized pieces
  • 0.5 onion, thinly sliced
  • 1 tablespoon dried dill weed
  • 1 pinch onion and herb seasoning blend (such as Mrs. Dash®)
  • 4 (4 ounce) fillets swai fish
  • 2 lemons, thinly sliced
  • lemon, cut into wedges
Instructions:
  • Preheat the outdoor grill to medium heat and generously spray 4 large squares of aluminum foil with cooking spray.
  • Melt 1/3 of the butter in a skillet over medium heat. Combine asparagus, onion, dill, and seasoning blend with the melted butter, then distribute the mixture evenly among foil squares.
  • 1. Arrange swai fillets on top of the vegetables. Dot each fillet with butter. Season generously with the seasoning blend. Place lemon slices on top. Fold the foil into packets, ensuring a tight seal while allowing steam to circulate.
  • Grill the packets until the swai flakes easily with a fork, about 20 to 25 minutes. Carefully open the packets and drizzle lemon juice over the swai and vegetables.
