Homemade fortune cookies - a fun and personalized treat for celebrations like Chinese New Year!
Ingredients:
  • cooking spray
  • 1 large egg white
  • 0.125 teaspoon vanilla extract
  • 0.25 cup unbleached all-purpose flour
  • 0.25 cup white sugar
Instructions:
  • Preheat the oven to 400°F (200°C) and generously grease two cookie sheets with cooking spray.
  • Prepare small strips of paper, approximately 4 inches in length and 1/2 inch in width, and write fortunes on them.
  • Combine egg white and vanilla in a bowl, whisk until frothy. Add flour, sugar, and salt, sift and stir until well combined.
  • Place two generous spoonfuls of batter on a lined baking sheet, making sure to leave at least 4 inches of space between each. Then, gently tip the sheet to form 3-inch-wide circles with the batter.
  • Bake in the preheated oven for about 5 minutes until cookies are pale in the center and golden on the outer 1/2-inch edge.
  • Take out the cookies from the oven. Using a wide spatula, swiftly flip one cookie onto a wooden board. Put a fortune near the center of the cookie, fold it in half around the paper. Gently press the folded edge over the edge of a measuring cup or coffee mug, then fold the pointed ends down, one inside and one outside the cup. Set the cookie in a muffin tin or egg carton to maintain its shape as it cools. Repeat with the second cookie.
  • While the first batch is in the oven, shape two more cookies on the second cookie sheet. As you shape the first batch of baked cookies, bake the second batch. Repeat until all cookies are baked and shaped.
