Create irresistible Chinese restaurant-style fortune cookies at home; customize with personal messages for any event. Also try rolling into cigar shapes filled with icing for a unique crowd-pleaser!
Ingredients:
  • 3 egg whites
  • 0.75 cup white sugar
  • 0.5 cup butter, melted and cooled
  • 0.25 teaspoon vanilla extract
  • 0.25 teaspoon almond extract
  • 1 cup all-purpose flour
  • 2 tablespoons water
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) while preparing your fortunes on small strips of paper and either greasing the cookie sheets or lining them with parchment paper.
  • In a spacious glass or metal bowl, whisk together egg whites and sugar using a high-speed electric mixer until frothy, approximately 2 minutes. Lower the speed and gently fold in melted butter, vanilla, almond extract, water, and flour separately, making sure to mix thoroughly after each addition. The mixture should have a similar consistency to pancake batter. Portion the batter onto the baking sheets in 3-inch circles, leaving space between each for expansion.
  • Bake in the preheated oven for 5 to 7 minutes until edges turn slightly brown. Place a message in the center, fold in half, then shape into a horseshoe. If they spring open, cool in a muffin tin until set.
