Ring in Chinese New Year with homemade fortune cookies, invented by a Japanese family in North America to serve with tea in their garden.
Ingredients:
  • 60g unsalted butter, softened
  • 110g caster sugar
  • 2 eggwhites, at room temperature
  • 50g plain flour
Instructions:
  • 1. Preheat the oven to 180°C. 2. In a bowl, mix together butter and sugar until well combined using a wooden spoon. 3. Gradually add egg whites one at a time, stirring until the mixture is smooth. 4. Fold in the flour and a pinch of salt until the batter is smooth.
  • Place a baking paper on a greased oven tray, marking 4 circles using an 8cm pastry cutter as a guide, spaced 4cm apart. Spoon a slightly rounded teaspoon of mixture onto each circle. Spread batter evenly with the back of a spoon to fill circles.
  • Bake until the cookies turn golden brown around the edges. Quickly loosen each cookie with a spatula, then place a message on top of each one. Fold the hot biscuits in half, pressing the edges together, and then bend in half over the edge of a glass to make crescent shapes. Hold for a few seconds, then transfer to a wire rack to cool.
  • Continue the process with the rest of the batter and then store the finished product in an airtight container for up to 5 days.
