Four-Cheese Fettuccine

Quick and easy homemade restaurant-style fettuccine.
Ingredients:
  • 1 package (16 ounces) uncooked fettuccine
  • 2 tablespoons butter or margarine
  • 4 medium green onions, chopped ( 1/4 cup)
  • 1 tablespoon chopped fresh parsley
  • 1/2 cup ricotta cheese
  • 1/2 cup crumbled feta cheese (2 ounces)
  • 3/4 cup shredded Asiago cheese (3 ounces)
  • 3/4 cup freshly grated or shredded Parmesan cheese
  • 1/2 teaspoon pepper
  • Chopped fresh parsley, if desired
Instructions:
  • Prepare and strain fettuccine following package instructions.
  • In a 12-inch skillet over medium heat, sizzle oil and butter until fragrant. Add onions and 1 tablespoon of parsley, sauté for about 4 minutes, stirring occasionally, until onions soften.
  • Add the ricotta and feta cheeses, lower the heat, and stir continuously for about 2 minutes until cheeses are melted.
  • Combine fettuccine, Asiago and Parmesan cheeses, and pepper in the skillet mixture. Cook for about 4 minutes, gently tossing until the cheeses are melted and the fettuccine is evenly coated. Garnish with parsley before serving.
