Ultimate grilled cheese with 4 cheeses, spinach, pickled veggies, and tomatoes - perfect for two!
Ingredients:
  • 2 tablespoons salted butter, softened
  • 1 teaspoon minced garlic
  • 2 thick slices Italian bread
  • 1.5 tablespoons olive oil, divided, or more as needed
  • 2 cups chopped fresh spinach
  • 0.5 cup giardiniera, drained
  • 2 slices mozzarella cheese
  • 2 slices provolone cheese
  • 2 slices Asiago cheese
  • 2 slices Fontina cheese
  • 3 slices Roma tomato, cut lengthwise, or more to taste
Instructions:
  • Combine the butter and garlic in a small bowl until fully mixed. Spread half of the butter mixture evenly on one side of each slice of bread and then set them aside.
  • In a large skillet over medium-low heat, warm 1 tablespoon of oil. Add spinach and giardiniera, and saute until the spinach wilts and the mixture is heated through, about 3 to 5 minutes. Transfer to a bowl and clean the skillet.
  • In a warm skillet, add one slice of bread with buttered side down on one side and heat 1/2 tablespoon of oil on the other side. Cook mozzarella slices until soft, about 1 to 2 minutes and then place them on top of the bread in the skillet. Repeat the process with provolone, Asiago, and Fontina slices.
  • Place the spinach mixture and tomato slices in the skillet with a touch more oil if needed. Cook for 2 to 3 minutes until warm. Layer the spinach mixture on top of the cheese, then add the tomato slices and the last buttered bread slice on top. Flip the sandwich and cook for 5 to 10 minutes until golden brown and the cheese is melted.
