Delicious gluten-free Italian coconut cookies made with only 4 simple ingredients for a light and flavorful treat.
Ingredients:
  • 3 egg whites
  • 0.75 cup white sugar
  • 2.5 cups shredded coconut, divided
  • 0.25 cup gluten-free all-purpose baking flour
Instructions:
  • Preheat your oven to 275 degrees F (135 degrees C) and prepare 2 baking sheets with parchment paper.
  • Whisk egg whites and sugar in a large bowl until soft peaks form, about 2 minutes. Gently fold in 2 cups of shredded coconut and gluten-free flour until a dough forms.
  • Form the dough into walnut-sized balls. Coat with the rest of the shredded coconut and place them 2 inches apart on the baking sheets.
  • Bake in the preheated oven for 30 minutes until lightly golden. Let cool on the baking sheets for 1 minute before transferring to a wire rack to cool completely.
