Make-ahead freezer breakfast sandwiches: 30 minutes of prep on the weekend for 6 easy grab-and-go breakfasts all week!
Ingredients:
  • 6 sausage patties
  • coconut oil cooking spray
  • 6 eggs, divided
  • 6 dashes cayenne pepper, divided
  • 6 whole grain English muffins, split and toasted
  • 6 slices American processed cheese
Instructions:
  • Preheat a large skillet over medium heat. Cook sausage patties, flipping occasionally, until beautifully browned and fully cooked, for 10 to 12 minutes. Transfer the patties to a paper towel-lined plate.
  • Heat a 3-inch mini frying pan coated with coconut oil cooking spray over medium heat. In a small bowl, whisk 1 egg, a dash of cayenne pepper, salt, and pepper. Pour the mixture into the pan and cook without stirring until set on the bottom, around 1 1/2 minutes. Flip the egg and cook without stirring until set on the other side, about 1 minute. Transfer to a plate and repeat with the remaining eggs and cayenne pepper.
  • Prepare delicious breakfast sandwiches by layering a cool egg patty on the bottom half of an English muffin, adding a slice of cheese, a sausage patty, and the top of the English muffin. Wrap the sandwich in aluminum foil and freeze.
  • Microwave each sandwich, unwrapped, for 2 minutes before enjoying.
