Make ahead and freeze these delicious baked ham and egg croissant sandwiches for a convenient and tasty meal on the go! Simply reheat in the microwave for a quick and satisfying bite!
Ingredients:
  • 12 eggs, beaten
  • 0.25 cup softened butter
  • 6 croissants, split
  • 12 slices smoked ham
  • 6 slices Colby-Jack cheese
Instructions:
  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray.
  • Transfer the beaten eggs into the baking dish. Bake in the preheated oven until firm, about 8 to 10 minutes. Let it cool, then slice into 6 portions.
  • Spread the cut sides of croissants with butter. Place a portion of the cooked egg on each croissant bottom. Layer each with two slices of ham and a slice of Colby-Jack cheese. Top with croissant tops and wrap each sandwich tightly with plastic wrap. Freeze on a baking sheet until solid, around 3 hours. Store in the freezer.
  • Microwave the wrapped sandwich on High until the center is hot, which should take around 1 to 2 minutes.
