Freezer-Friendly Swedish Meatballs

Homemade meatball and gravy freezer meal - just thaw, reheat, and serve with boiled egg noodles for a quick and delicious dinner in under 10 minutes!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1/2 lb lean ground pork
  • 3/4 cup Progresso™ plain bread crumbs
  • 1/2 cup finely chopped red or white onion
  • 1 tablespoon finely chopped fresh parsley
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/2 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1 egg
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1 teaspoon paprika
  • 2 cups boiling water
  • 3/4 cup sour cream
  • Cooked medium egg noodles
  • Chopped fresh parsley
  • Lingonberry jam
Instructions:
  • Combine all Meatball ingredients in a large bowl until fully mixed. Shape mixture into small walnut-sized meatballs.
  • In a large skillet over medium heat, sizzle the oil. Cook the meatballs in batches until they're beautifully browned on all sides, then transfer them to a big plate.
  • Combine flour, paprika, 1/2 teaspoon salt, and 1/8 teaspoon pepper with the drippings in the skillet to create a flavorful roux. Pour in boiling water and sour cream, stirring until fully incorporated.
  • Place the meatballs back in the skillet. Simmer over medium-low heat for 15-20 minutes, turning occasionally, until meatballs are fully cooked, no longer pink in the center, and gravy has thickened.
  • Plate meatballs alongside tender egg noodles, generously spoon savory gravy over the top, and sprinkle with fresh parsley. Accompany with a side of tangy lingonberry jam for a burst of flavor.
