Get-ahead gravy

Prepare Make-ahead gravy using chicken drumsticks or legs, saving bones for future recipes. Reheat on Christmas Day for a stress-free meal.
Ingredients:
  • 2 onions
  • 2 carrots
  • 2 sticks of celery
  • 2 rashers of smoked streaky bacon
  • 2 fresh bay leaves
  • 2 sprigs of fresh sage
  • 2 sprigs of fresh rosemary
  • 2 star anise
  • 10 chicken wings or 3 chicken drumsticks and 3 chicken legs
  • olive oil
  • 60 ml sherry or port optional
  • 4 tablespoons plain flour
  • 2 tablespoons cranberry sauce
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Peel onions, wash carrots, and roughly chop with celery and bacon. Place vegetables, bay leaves, sage, rosemary, and star anise in a roasting tray, then top with chopped bacon. Add chicken to the tray. For chicken wings, break them open and bash with a rolling pin. Drizzle with oil, season with salt and pepper, toss, then bake for 1 hour. Remove from oven, mash everything with a potato masher on low heat. Add sherry or port. Gradually stir in flour, pour in boiling water, simmer for 30 minutes. Strain gravy into a bowl, season, cool, then store. On the day, defrost the gravy and pour it into the turkey tray with juices, bring to a boil, stir in cranberry sauce, strain into a pan, keep warm until serving.
