Broccoli soup

Ingredients:
  • 1 clove of garlic
  • 2 sticks of celery
  • 400 g broccoli
  • ½ a bunch of fresh mint
  • olive oil
  • 1 litre chicken or vegetable stock cube organic if you can afford
  • ricotta cheese
Instructions:
  • Peel and finely chop the garlic. Trim and roughly chop the celery and broccoli. Pick and finely chop most of the mint leaves, reserving a few for garnish. Soften the garlic and celery in a pan with oil for 2-3 minutes. Add broccoli and stock, then cook for another 5 minutes. Blitz with a handful of mint in a food processor. Season and serve, topping with crumbled ricotta and reserved mint leaves.
