Creamy broccoli and potato puree with garlic, onions, and a touch of nutmeg.
Ingredients:
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, peeled and chopped
  • 2 (10 ounce) packages chopped frozen broccoli, thawed
  • 1 potato, peeled and chopped
  • 4 cups chicken broth
  • 0.25 teaspoon ground nutmeg
  • salt and pepper to taste
Instructions:
  • In a large saucepan, heat up some fragrant olive oil and saute a flavorful mix of onion and garlic until they are soft. Add in the vibrant broccoli, hearty potato, and savory chicken broth. Bring everything to a boil, then lower the heat and let it gently simmer for 15 minutes until the vegetables are perfectly tender.
  • Use a hand mixer or blender to blend the mixture until velvety smooth. Transfer back to the saucepan, warm it up, and add a touch of nutmeg, salt, and pepper for flavor.
