Broccoli soup with scallops

Elevate broccoli soup with seared scallops for a gourmet twist that will impress everyone.
Ingredients:
  • 150ml olive oil
  • 2 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 200g potato
  • 1kg broccoli
  • 125ml cream
  • 125.00 ml coarsely chopped flat-leaf parsley
  • 18 scallops, without roe
  • Chervil or flat-leaf parsley leaves, to serve
Instructions:
  • In a heavy-based saucepan over low-medium heat, warm 2 tablespoons of oil. Sauté onions, garlic, and 2 teaspoons of salt for 5 minutes. Add potatoes and 5 cups water; bring to a boil. Mix in broccoli and simmer for 10 minutes until tender. Cool slightly, then blend in a food processor in 3 batches until smooth. Return soup to the pan, stir in cream, and season with pepper. Reheat gently over medium heat before serving.
  • In a food processor, blend parsley and 100ml oil until smooth, then strain through a fine sieve.
  • In a hot frying pan with the remaining oil, sear scallops for 30 seconds on each side until perfectly tender. Serve soup garnished with scallops and chervil leaves, and finish with a drizzle of parsley oil.
