Indulge in a velvety broccoli soup with delectable cheesy au gratin croutons. Perfect for vegetarians as a starter.
Ingredients:
  • 2 tablespoons unsalted butter, divided
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 5 cups vegetable broth, or more to taste
  • 2 pounds broccoli, trimmed
  • 0.5 cup heavy whipping cream
  • 2 teaspoons kosher salt, or more to taste
  • freshly ground black pepper to taste
  • 1 pinch freshly grated nutmeg
  • 1 pinch ground cayenne pepper, or to taste
  • 3 slices country white bread, halved crosswise
  • 3 cups shredded sharp Cheddar cheese
Instructions:
  • In a large pot over medium heat, melt 1 tablespoon of butter. Add the onion and cook until translucent, about 5 to 6 minutes. Stir in the garlic for 1 minute. Pour in the broth and bring to a simmer over high heat.
  • Prepare the broccoli by separating the florets from the heads and cutting any large florets in half. Cut the stems into 1/2-inch pieces. Add the broccoli to the simmering broth and cover. Cook until the broccoli softens slightly, about 2 to 3 minutes. Reduce the heat to medium-low and continue to simmer, stirring occasionally, until the broccoli is very tender, approximately 10 minutes. Remove from heat and serve.
  • Puree the broccoli until velvety smooth using an immersion blender. Add cream, salt, pepper, nutmeg, and cayenne, stirring well. Heat the soup over medium-low heat for about 5 minutes, until the cream is warmed through.
  • Preheat the oven to 375°F (190°C) and cover a rimmed baking sheet with aluminum foil.
  • Spread the remaining 1 tablespoon of butter evenly on both sides of the bread slices, then place them on the lined baking sheet.
  • Bake bread in a preheated oven, flipping halfway, until golden and crispy, for 4 to 5 minutes.
  • 1. Arrange 6 oven-proof soup crocks on a foil-lined baking sheet. Fill each crock almost to the top with soup. Top each crock with a piece of toasted bread and cover it with Cheddar cheese.
  • Position oven rack 6 inches from heat source and preheat broiler.
  • Broil under the high heat until the cheese is golden brown and bubbly, which typically takes 3 to 4 minutes.
