Broccoli soup with Swiss cheese toasts

Kid-friendly broccoli soup topped with Swiss cheese toasts, a simple and satisfying vegetarian meal.
Ingredients:
  • 1kg broccoli
  • 20.00 gm butter
  • 1 garlic clove, finely chopped
  • 1.25L (5 cups) vegetable liquid stock
  • 1 x 30cm French bread stick (baguette)
  • 150g Swiss cheese, thinly sliced
Instructions:
  • Slice the broccoli stems thinly and separate the heads into uniform florets.
  • In a large saucepan over medium heat, warm up the oil and butter. Briefly sauté the broccoli stem and garlic, stirring frequently, until tender, about 1 minute. Add the florets and mix well.
  • Pour in a generous 1 liter (4 cups) of stock and crank up the heat to high until it reaches a vigorous boil. Lower the heat to medium, cover the pot, and let it simmer for 15 minutes until the broccoli is tender yet vibrant green. Uncover it, then allow it to cool slightly before serving.
  • Blend half of the mixture with half of the remaining stock in a blender until smooth. Pour it back into the pan. Repeat the blending process with the rest of the mixture and stock. Heat the soup over medium heat, stirring until it is heated through. Season with salt and pepper to taste.
  • Preheat the grill to medium-high. Slice the bread thinly crossways and arrange in a single layer on a baking tray. Toast under the grill for about 1 minute on each side until golden. Then, top with cheese and grill for another 1-2 minutes until it melts.
  • Divide the soup evenly into serving bowls. Place 2 toasts on top of each bowl. Sprinkle with pepper and serve with the extra toasts on the side.
