French Fries all'Assassina (Assassin’s French Fries)

Assassin's French fries: Inspired by Italy's unique spaghetti all'assassina, these fries are savory, spicy, and intensely delicious with caramelized tomato paste and cheese.
Ingredients:
  • 3 tablespoons tomato paste
  • 1/4 cup olive oil
  • 3 garlic cloves, finely crushed or minced
  • 1/2 teaspoon granulated garlic
  • 1 1/2 teaspoons red pepper flakes
  • 1/4 teaspoon cayenne
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon kosher salt
  • 16 ounces frozen crinkle cut French fries
  • 2 ounces Parmigiano-Reggiano cheese
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C), and effortlessly line a baking sheet with parchment paper.
  • Combine tomato paste, olive oil, crushed garlic, granulated garlic, red pepper flakes, cayenne, black pepper, and salt in a large mixing bowl, whisking thoroughly.
  • Gently add a few fries at a time using your hands, ensuring they are well separated and free of any ice before placing them in the bowl.
  • Evenly coat all fries by gently tossing with a spatula until fully covered.
  • Grate Parmigiano-Reggiano over the fries with a microplane. Toss until evenly mixed. Repeat with another round of grated cheese.
  • Spread out the fries evenly on the baking sheet. Sprinkle Parmigiano-Reggiano generously over the fries until they are fully covered.
  • Bake the fries in the preheated oven until they are golden brown, slightly charred in spots, and crispy around the edges, for 30 to 35 minutes. Check for doneness starting at 30 minutes, adjusting as needed based on the size and shape of the fries.
  • Top fries with more freshly grated Parmigiano-Reggiano, sprinkle with chopped parsley, and serve right away.
