Haricots verts sautéed in butter with onions and herbs, a delightful side dish for any meal.
Ingredients:
  • 1 pound thin green beans (haricots vert), trimmed
  • 1/4 cup red onion, chopped fine
  • 3 Tbsp butter
  • 2 Tbsp parsley, chopped fine
  • 2 Tbsp fresh thyme leaves
  • 2 Tbsp tarragon or basil, chopped fine
  • 2 Tbsp chives, chopped fine
  • Salt and pepper to taste
  • Lemon wedges
Instructions:
  • After boiling the beans for 2 minutes in a pot of salty water, transfer them to a bowl of ice water to halt the cooking process and preserve their vibrant color. Drain and gently pat dry before use. Optional: Boil regular green beans for a slightly longer period than haricots vert.
  • In a large sauté pan over medium-high heat, sauté the onions in butter until translucent, about 2-3 minutes.
  • Incorporate the green beans: Cook the green beans in the pan for 2-3 minutes, stirring frequently.
  • Enhance with seasonings: Incorporate all herbs along with a pinch of salt and pepper, toss gently to mix. Allow to cook for an additional 1 minute. Serve hot or at room temperature with lemon wedges. Enjoy the dish? Share your feedback below!
