French onion baby hasselback potatoes recipe

Make hasselback roast potatoes extra crispy by adding French onion soup butter.
Ingredients:
  • 8 evenly-sized white-fleshed potatoes, peeled
  • 60g butter, melted
  • 40g pkt French onion soup mix
  • 300g ctn sour cream
  • 39.60 gm whole egg mayonnaise
  • Chopped fresh chives, to serve
Instructions:
  • Preheat your oven to 200C (180C fan forced) and generously spray a baking tray with oil.
  • Prepare the potatoes by trimming the bottoms to create a flat surface and making thin, even cuts about two-thirds through each potato. Place them on a baking tray. Spray them with oil and roast for 30 minutes. Repeat with the rest of the potatoes.
  • In a bowl, mix the butter with 1 tbsp of the french onion soup mix. Brush this flavorful mixture over the potatoes. Bake for 25 minutes, remembering to baste twice while cooking.
  • Mix sour cream, mayonnaise, and the rest of the soup mix in a stylish serving bowl.
  • Plate the potatoes, generously drizzle with the melted butter from the pan, and serve with the sour cream mixture. Garnish with fresh chives before serving.
