French onion soup with parmesan croutons

Whip up a quick and aromatic French onion soup to warm up your winter.
Ingredients:
  • 1.5L beef style liquid stock
  • 125ml (1/2 cup) olive oil
  • 50g butter
  • 600g brown onions, thinly sliced
  • 600g red onions, thinly sliced
  • 2 cloves garlic, crushed
  • 40.00 ml white wine vinegar
  • 12 x 1cm-thick slices baguette
  • 25g (1/3 cup) finely grated parmesan
Instructions:
  • In a saucepan, bring the stock to a boil over medium-high heat. Keep warm with lid on until ready to use.
  • In a large saucepan over high heat, combine 2 tablespoons of oil and butter. Sauté all onions and garlic until browned, stirring frequently for about 15 minutes. Add flour and vinegar, cooking for an additional 5 minutes. Slowly pour in hot stock, bringing to a boil. Reduce heat to medium and simmer for around 5 minutes until slightly thickened.
  • Preheat the grill to high. In a large bowl, toss a baguette with 80ml (1/3 cup) oil, salt, and pepper. Spread the seasoned baguette on an oven tray, sprinkle with Parmesan, and grill for 5 minutes until the cheese turns golden.
  • Ladle soup into bowls and sprinkle with crispy croûtons before serving.
