Make fast, no-knead beignets for a taste of New Orleans without the wait!
Ingredients:
  • 1 package active dry yeast
  • 0.5 cup warm water (110 degrees F (43 degrees C))
  • 0.5 cup evaporated milk
  • 0.5 cup white sugar
  • 1 egg, beaten
  • 3 cups all-purpose flour
  • vegetable oil for frying
Instructions:
  • In a large bowl, mix yeast with warm water until it forms a creamy foam, about 5 minutes.
  • Combine milk, sugar, egg, oil, vanilla extract, and salt with the yeast, then vigorously mix in the flour until a sticky dough forms.
  • Divide the dough into quarters, then place one portion on a generously floured surface. Roll it out to about 1/8-inch thickness using a well-floured rolling pin. Cut into 2-inch squares, and repeat the process with the remaining three portions.
  • Preheat oil in a deep-fryer or large saucepan to 370 degrees F (188 degrees C. Fry beignets in batches until golden and puffed, about 2-3 minutes. Flip and fry for an additional 1-2 minutes until evenly browned. Drain on paper towels.
