Decadent chocolate pie paired perfectly with coffee. Top with whipped cream if desired. Use fresh eggs; caution for vulnerable populations.
Ingredients:
  • 2 cups butter
  • 1.5 cups white sugar
  • 4 (1 ounce) squares unsweetened baking chocolate
  • 4 eggs
  • 1 (9 inch) pie shell, baked
Instructions:
  • Melt chocolate in a double boiler, stirring occasionally until smooth. Remove from heat and let cool to lukewarm temperature.
  • Cream together butter and sugar in a large bowl until light and fluffy. Mix in melted chocolate and vanilla. Using an electric mixer on medium speed, incorporate the eggs one at a time, allowing 5 minutes for each addition. Pour the filling into a pre-baked pie shell and chill in the refrigerator for 4 hours before serving.
