Mini French Toast Custard Cups with Dutch Baby Pancake Texture.
Ingredients:
  • 0.5 cup whole milk
  • 0.5 cup all-purpose flour
  • 3 large eggs
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 0.75 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • In a blender, mix milk, flour, eggs, maple syrup, vanilla, cinnamon, nutmeg, and salt until batter is smooth and lump-free, for about 1 to 2 minutes.
  • Cut the butter into 12 equal pieces and place one piece in each cup of a 12-cup standard muffin pan. Melt the butter in the oven for about 1 minute. Remove from the oven and evenly divide the pancake batter between the cups.
  • Place the muffin pan on a baking sheet for easy cleanup, then bake in the preheated oven until pancakes are puffed and golden brown on the edges, about 10 to 15 minutes. Let cool in the pan for 2 minutes, run a knife around the edges and bottoms to loosen, then serve right away.
