Transform stale bread into delicious French toast with caramelized apple topping. Perfect for dessert or brunch.
Ingredients:
  • 40g butter
  • 3 red apples, cored, cut into thick wedges
  • 75g (1/3 cup) demerara sugar
  • 4 eggs
  • 125ml (1/2 cup) pouring cream
  • 34.40 gm demerara sugar
  • 20.00 gm butter
  • 6 thick slices bread
Instructions:
  • Create the caramelised apples: In a large non-stick pan over medium-high heat, melt 40g butter until foaming. Add apples and cook for 5 minutes until golden. Then, add sugar and cook until dissolved for 2 minutes. Stir in orange juice and let it come to a boil. Keep stirring for 1 minute until the mixture thickens.
  • Create a luscious batter by gently whisking eggs in a bowl. Next, mix in pouring cream and demerara sugar until well combined.
  • Prepare the French toast: Heat 2 teaspoons of butter in a large non-stick frying pan until foamy. Dip each of the 3 thick bread slices in the egg mixture, adding them to the pan. Cook for 1 minute on each side until golden and crispy. Transfer to a plate. Repeat the process with another 2 teaspoons of butter, 3 more slices of bread, and the remaining egg mixture. Cut the French toast slices in half diagonally, top with the apple mixture, and dust with icing sugar before serving.
