Crispy cornmeal and cinnamon-coated tofu, pan-fried for a kid-friendly, gluten-free French toast alternative.
Ingredients:
  • 1 (12 ounce) package extra-firm tofu, drained
  • salt to taste
  • 0.5 cup cornmeal
  • ground cinnamon, or more to taste
  • olive oil, or more as needed
Instructions:
  • Slice the tofu into delicate 1/8-inch-thick slices, gently placing each piece on a paper towel. Sprinkle a touch of salt on each side to enhance the flavor.
  • Combine cornmeal with a hint of salt and cinnamon in a shallow bowl, stirring well.
  • In a saucepan, warm up a drizzle of olive oil over medium-high heat.
  • Coat tofu slices in cornmeal mixture, shaking off excess. Cook in hot saucepan until golden brown and crisp, about 2 to 3 minutes on each side.
