Indulge in vanilla custard-filled French toast sandwiches topped with cream and fresh strawberries for a delightful teatime treat.
Ingredients:
  • 2 eggs
  • 3 tablespoons milk
  • 3 tablespoons white sugar
  • 0.5 teaspoon vanilla extract
  • 4 slices plain bread, cut into 4 pieces
  • 1 cup oil for frying
  • 1 cup milk, divided
  • 2 tablespoons custard powder
  • 0.5 cup confectioners' sugar
  • 0.5 cup whipped cream
  • 8 strawberries, halved
  • 8 toothpicks
Instructions:
  • Combine eggs, 3 tablespoons of milk, white sugar, and vanilla extract in a shallow bowl and whisk until smooth.
  • In a large saucepan, warm a 1/4-inch layer of oil over medium heat.
  • Coat 4 slices of bread in the luscious egg mixture and pan-fry until gorgeously golden on both sides, approximately 2 minutes each. Repeat with the rest of the slices to indulge in perfection.
  • Mix custard powder with 2 tablespoons of milk until smooth in a bowl. Boil the rest of the milk in a saucepan. Stir in the custard mixture and cook over low heat, stirring frequently, until thickened, approximately 5 minutes.
  • Lay out 8 slices of bread on a shallow tray. Generously spread custard on each slice. Top with the remaining 8 slices to make a sandwich. Sprinkle with confectioners' sugar. Finish by adding a dollop of whipped cream and a strawberry on each sandwich, securing them together with a toothpick.
