Fresh apricot cobbler paired with creamy ice cream for a perfect summer dessert.
Ingredients:
  • 1 cup water
  • 0.75 cup white sugar
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 6 cups halved fresh apricots
  • 1 tablespoon butter
  • 0.25 cup white sugar
  • 1 tablespoon baking powder
  • 7 tablespoons butter
  • 1.5 cups milk
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a saucepan, combine water, 3/4 cup sugar, cornstarch, cinnamon, and nutmeg; bring to a boil and stir until thickened, approximately 1 minute. Lower the heat to medium, mix in apricots and 1 tablespoon of butter, and simmer until warm, about 5 minutes. Pour the mixture into a 9x13-inch baking dish.
  • In a large bowl, mix together flour, 1/4 cup sugar, baking powder, and salt. Cut in 7 tablespoons of butter until the mixture looks like coarse crumbs. Gently fold in milk until the mixture is just moistened. Spoon the topping over the apricot mixture and sprinkle the remaining 2 tablespoons of sugar on top.
  • Bake until beautifully golden brown in the preheated oven for 30 to 35 minutes.
