Fresh apricot tartlets

Delicious tartlets perfect for afternoon tea.
Ingredients:
  • 200g plain flour
  • 110g icing sugar, plus extra to dust
  • 110g unsalted butter
  • 107.50 gm caster sugar
  • 24 apricots halved, stoned
  • 150g marzipan
  • Milk, to brush
Instructions:
  • Combine flour, icing sugar, and butter in a food processor until mixture is fine and crumbly. Add egg and process until dough forms a ball. Wrap dough in plastic wrap and chill in the refrigerator for 30 minutes.
  • In a saucepan, combine caster sugar with 500ml of water and stir over low heat until dissolved. Add apricots, ensuring they are submerged. If needed, add more water. Simmer gently until apricots are tender but still firm. Remove apricots and let them cool. Chill or freeze the syrup for future use.
  • Preheat the oven to 180°C. Line a baking tray with non-stick baking paper. Roll out the pastry on a lightly floured surface into a 40cm circle. Cut out six 14cm circles using a small plate and place them on the lined tray.
  • Thinly slice marzipan and place in the center of each pastry circle, leaving a 5cm border, slightly overlapping. Quarter the apricots and arrange them over the marzipan. Fold the pastry edges over the filling, creating pleats. Brush with milk, bake for 25 minutes until golden, then dust with icing sugar after cooling slightly.
