Simplify with a Grilled Apricot Tart: Fresh apricots, raisins, pecans for a delicious rustic treat, perfect for summer meals.
Ingredients:
  • 1/2 recipe sour cream pastry crust  recipe
  • 1/4 cup packed brown sugar
  • 2 teaspoons flour
  • 1/8 teaspoon ground cardamom
  • 1 pound pitted and quartered fresh apricots
  • 1/4 cup raisins
  • 2 tablespoonschopped pecans
  • Egg wash and sprinkling sugar, optional
Instructions:
  • Prepare the filling by combining sugar, flour, and cardamom in a medium bowl. For a touch of extra flavor, consider adding a pinch of cayenne. Gently mix in apricot halves and raisins until they are evenly coated. Let the mixture sit for 10 minutes to blend flavors. Finally, fold in the chopped pecans.
  • Allow the chilled pie dough to sit at room temperature for 10 minutes. Dust a clean surface with flour and roll out the dough into a 13-inch round of even thickness.
  • For grilling: Lay the rolled-out pie dough on a generously buttered double layer of aluminum foil. For baking in the oven: Place the rolled-out pie dough on a lightly buttered baking sheet with small rims.
  • Place the apricot mixture in the center of the pie dough round, leaving a 2-inch border all around.
  • Create a beautiful crust: Fold the pie crust edges over to reveal a small circle of filling. For an attractive finish on your rustic tart, mix one beaten egg with a tablespoon of milk or cream, brush it over the top crust, and sprinkle with coarse sugar.
  • For grilling: Set up your grill for medium indirect heat. Gently place the tart on foil on the grill, ensuring it's away from direct heat. Cover and maintain temperature between 350°F and 400°F. Grill for 40-50 minutes until crust browns and filling bubbles. For baking: Preheat oven to 350°F and bake the tart for 45-50 minutes until crust browns and filling bubbles. Serve with vanilla ice cream for a delicious treat.
