Try this sophisticated rustic bar with pecans, dried cherries, hemp, pepita, & sunflower seeds. Enhance it with apricots & walnuts for a twist!
Ingredients:
  • 1/2 cup sprouted whole wheat flour
  • 1/3 cup packed brown sugar
  • 1/4 cup old-fashioned oats
  • 1/4 cup butter, softened
  • 3 tablespoons honey
  • 2 eggs
  • 1/2 cup chopped pecans
  • 1/2 cup dried cherries
  • 2 tablespoons raw coconut flakes
  • 2 tablespoons hemp seed
  • 2 tablespoons sunflower nuts
  • 2 tablespoons pepita seeds
  • 1/4 teaspoon fine sea salt
Instructions:
  • Preheat the oven to 350°F. Line an 8-inch pan with two (12x8-inch) sheets of parchment paper, leaving some overhang on two opposite sides. Place the second sheet on top, overhanging the other two sides of the pan.
  • Combine the Base ingredients in a medium bowl until they form a soft crumbly dough. Press the mixture into the bottom of the pan and bake for 16 minutes.
  • In a small bowl, whisk together honey and eggs until well combined. Add the remaining topping ingredients and mix thoroughly. Pour this mixture over the base.
  • Bake for 18 to 23 minutes until beautifully golden. Allow to cool fully for about 1 hour. Lift by the edges of the paper to remove. Cut into 6 rows by 2 for perfect bars. Keep covered in the refrigerator.
