Indulgent caramel apple cheesecake, a must-have for Thanksgiving or autumn gatherings.
Ingredients:
  • 1.75 cups graham cracker crumbs
  • 1.5 tablespoons white sugar
  • 0.25 cup melted margarine
  • 2 cups individually wrapped caramels, unwrapped
  • 0.5 cup heavy whipping cream
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 cup white sugar
  • 0.5 cup sour cream
  • 1 tablespoon vanilla extract
  • 2 eggs
  • 2 cups diced Granny Smith apples
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9-inch springform pan.
  • In a bowl, mix graham cracker crumbs and 1 1/2 tablespoons of sugar. Add margarine and stir until well combined. Press the mixture into the bottom of the prepared pan to form a crust.
  • Bake in the preheated oven for 10 minutes until lightly browned. Remove the pan from the oven and lower the temperature to 325 degrees F (165 degrees C).
  • Gently melt caramels and cream in a double boiler over simmering water, stirring often and scraping down the sides with a rubber spatula to prevent burning. Take off heat and let it cool slightly. Set aside 1 cup of caramel for the cheesecake filling and refrigerate the remaining for later.
  • Using an electric mixer, blend cream cheese until smooth. Incorporate 1/2 cup white sugar while beating, ensuring to scrape down the sides and beaters. Add sour cream and vanilla, mix until well combined. Lastly, incorporate eggs at low speed just until mixed in.
  • Gently mix 1 cup of caramel sauce and apples into the cream cheese mixture, then pour everything over the crust.
  • Preheat the oven and bake for 15 minutes. Lower the oven temperature to 275 degrees F (135 degrees C) and bake for an additional 75 to 90 minutes until the center is mostly set. Let it cool to room temperature, then chill in the refrigerator for at least 1 hour.
  • Warm up the caramel sauce and generously pour it over the decadent cheesecake.
