Fresh Nectarine Cake with Blackberries

"Summer fruit cake with nectarines and blackberries, beautifully decorated for a stunning presentation."
Ingredients:
  • 0.5 cup unsalted butter, at room temperature
  • 1 pinch salt
  • 1.5 cups all-purpose flour
  • 1.25 teaspoons baking powder
  • 1 tablespoon milk, or more as needed
  • 3 fresh nectarines - peeled, halved, and pitted, or more to taste
  • 1 (6 ounce) container fresh blackberries, or more to taste
  • 1 tablespoon confectioners' sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9-inch springform pan.
  • In a large bowl, create a fluffy mixture by using an electric mixer to beat the butter until creamy. Gradually blend in the sugar and salt until fully mixed. Add the eggs one at a time, ensuring each is thoroughly mixed in before adding the next.
  • Sift together the flour and baking powder, then gently mix into the batter on low speed. If necessary, add a splash of milk to adjust the batter consistency. Pour the batter into the springform pan, then artistically arrange the nectarines and blackberries on top.
  • Bake in the preheated oven for about 45 minutes until a toothpick inserted into the center comes out clean. Dust with confectioners' sugar, cool on a wire rack for 5 minutes, then carefully invert onto a serving plate or cooling rack. Let cool completely after running a table knife around the edges to loosen.
