Sparkling wine jellies with fresh nectarine

Sparkling wine jelly desserts with summer nectarines for a sweet and refreshing treat.
Ingredients:
  • 107.50 gm caster sugar
  • 18.00 gm gelatine powder
  • 750ml bottle sparkling wine
  • 6 medium white nectarines
  • 250g punnet strawberries, hulled, halved
  • 21.00 gm lemon juice
  • 12.00 gm icing sugar mixture
Instructions:
  • In a saucepan, combine sugar with 3/4 cup of cold water over medium-high heat. Stir for 2 to 3 minutes until sugar dissolves, then bring to a boil. Lower the heat to medium and simmer for 4 to 5 minutes until slightly thickened. Pour half of the mixture into a bowl, sprinkle gelatine over it, and whisk until dissolved. Add the remaining sugar syrup to the gelatine mixture and stir to combine.
  • Start by pouring the sparkling wine into a large jug. Then strain the gelatine mixture into the jug and stir everything together. Gently pour ½ cup of the champagne mixture into each glass by pouring it over the back of a spoon. Finally, refrigerate the glasses for 4 hours or until the mixture is set.
  • Score the bottom of 2 nectarines with a cross. Place them in a heatproof bowl and cover with boiling water. Allow them to sit for 1 minute, then drain and refresh under cold water. Peel and discard the skin with a small sharp knife, then roughly chop the nectarines. Blend the peeled nectarines, strawberries, lemon juice, and icing sugar until smooth. Strain the mixture into a bowl.
  • Cut the rest of the nectarines into slices. Pour the puree evenly into glasses. Garnish with the nectarine slices. Serve promptly.
