Raspberry kiss sparkling wine cocktail

Elevate your party with stunning raspberry cocktails garnished with mint and fresh raspberries.
Ingredients:
  • 500.00 ml fresh raspberries or frozen raspberries, plus extra to serve
  • 107.50 gm caster sugar, plus extra to coat
  • 40.00 ml brandy
  • 750ml bottle sparkling wine, chilled
  • Fresh mint leaves, to serve
Instructions:
  • In a saucepan over medium-high heat, combine raspberries, sugar, and 1/3 cup water. Stir and cook for 5 minutes until the sugar dissolves. Increase the heat to high and bring to a boil, then reduce to low and simmer for 5 minutes until the mixture thickens and the raspberries break down. Remove from heat and let cool for 5 minutes.
  • Strain raspberry mixture through a fine sieve to remove solids (2/3 cup total needed). Mix in brandy and stir until combined. Let it cool completely.
  • Moisten the rim of each glass with water, press in extra sugar to coat the rim. Fill serving glasses with raspberry mixture and then top off with sparkling wine.
  • Garnish with additional raspberries and mint leaves on toothpicks before serving.
