Delicious peach galette with buttery homemade crust, fresh peaches, and vanilla - perfect for summer dessert.
Ingredients:
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 cup iced water
  • 0.25 teaspoon vanilla extract
  • 2 sticks butter (such as Plugra®), cut into small cubes
  • 3 peaches, cut into 1/4-inch slices, or more to taste
  • 0.25 teaspoon salt
  • 0.25 cup white sugar
  • 0.5 teaspoon vanilla bean paste
  • 0.5 teaspoon cornstarch
Instructions:
  • For the dough: In a medium bowl, mix flour and salt. Slowly pour in water while stirring with a bowl scraper until absorbed. Stir in vanilla extract. Use your fingers to blend butter into the mixture until fully combined. Shape dough into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour, or overnight for best results.
  • For the filling: Combine peaches, salt, sugar, vanilla paste, and cornstarch in a medium bowl. Gently mix with a wooden spoon and allow to sit for 5 to 10 minutes until peach juices are released.
  • Preheat the oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  • On a floured surface, roll out the dough thinly to 1/4 inch. Cut out 8 circles using a cereal bowl. Space them out on baking sheets. Add 2 spoonfuls of peach filling to the center of each, leaving a 1/2 inch border.
  • Gently fold the edges of the crusts in 1/4 inch towards the center of each galette to create a protective lip for the filling.
  • Bake until the crust is golden brown and the bottom is cooked through, 12 to 15 minutes in the preheated oven.
