Pear and vanilla cinnamon bread: Moist and flavorful with fresh pears, vanilla pudding mix, and cinnamon.
Ingredients:
  • 2 pears - peeled, cored and shredded
  • 1 pear - peeled, cored and mashed
  • 1 egg, lightly beaten
  • 1 egg white, lightly beaten
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 cup white sugar
  • 0.25 cup instant vanilla pudding mix
  • 1.5 teaspoons cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.125 teaspoon baking powder
Instructions:
  • Preheat the oven to a toasty 325 degrees F (165 degrees C) and lightly grease a 5x9 inch loaf pan.
  • Combine shredded pears, mashed pear, egg, egg white, water, and vanilla in a bowl. In a separate bowl, mix flour, sugar, pudding mix, cinnamon, baking soda, salt, and baking powder. Gently fold the pear mixture into the flour mixture until just combined. Pour the batter into the prepared loaf pan.
  • Bake for 1 hour in a preheated oven until a knife inserted into the center comes out clean.
