Summer loaf bursting with fresh pears and pecans, freezes beautifully. Simply delectable and effortless to make.
Ingredients:
  • 1 cup vegetable oil
  • 2 cups granulated sugar
  • 2.5 cups pears - peeled, cored and chopped
  • 1 cup chopped pecans
  • 3 cups all-purpose flour
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and gently grease two 8x4 inch loaf pans.
  • Combine oil, sugar, and eggs in a large mixing bowl, beat until well combined. Stir in pears, pecans, and vanilla. In a separate bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gently fold the dry ingredients into the pear mixture until fully incorporated. Pour the batter into prepared loaf pans.
  • Bake in a preheated oven for 60 minutes until a toothpick inserted into the center of the loaf comes out clean. Let the loaves cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
