Whip up a quick and delectable dessert by combining tangy rhubarb and sweet strawberries with frozen pound cake.
Ingredients:
  • 2 cups chopped fresh rhubarb
  • 1 cup granulated sugar
  • 1/4 cup cranberry-apple drink
  • 3 cups sliced fresh strawberries
  • 1 cup whipping cream
  • 1 package (16 oz) frozen pound cake loaf, thawed, cubed
Instructions:
  • Cook rhubarb, granulated sugar, and drink in a 2-quart saucepan over medium heat for 10 to 15 minutes, stirring occasionally, until the rhubarb is tender and the mixture is syrupy.
  • Pour in a cup of strawberries and cook them with constant stirring for 1 to 2 minutes, gently pressing them down. Remove from heat and mix in the rest of the strawberries. Allow to cool a bit, then refrigerate for at least 1 hour until thoroughly chilled.
  • Prepare the whipped cream by beating whipping cream, powdered sugar, and vanilla in a medium bowl until stiff peaks form. In each of the 8 parfait glasses, layer sauce, cake cubes, and whipped cream, repeating the layers. Serve immediately and garnish each serving with a fresh strawberry slice, if desired.
