Chef John's strawberry granita: A refreshing, frozen Italian dessert bursting with the pure, sweet taste of fresh berries to cool you down on scorching days.
Ingredients:
  • 2 pounds ripe strawberries, hulled and halved
  • 1 cup water
  • 0.33333334326744 cup white sugar, or to taste
  • 0.5 teaspoon lemon juice
  • 0.25 teaspoon balsamic vinegar
  • 1 tiny pinch salt
Instructions:
  • Cleanse strawberries under a refreshing cold water rinse and allow to drain.
  • In a blender, combine berries, water, sugar, lemon juice, balsamic vinegar, and salt. Pulse to start blending, then blend for about 1 minute until smooth. Pour into a large baking dish, ensuring the mixture is about 3/8 inch deep.
  • Chill the uncovered dish in the freezer for about 45 minutes until the edges start to freeze, leaving the center slightly slushy.
  • - Place the mixture in the freezer and use a fork to gently stir the frozen crystals from the edges towards the center, mixing well. - Close the freezer and let it chill until the granita is almost frozen, around 30 to 40 minutes. - Lightly stir again with the fork, scraping loose the crystals. - Repeat the process of freezing and stirring with the fork three to four more times until the crystals are individual and the granita has a dry, fluffy texture.
  • Serve the granita in individual small bowls.
