Fresh Strawberry Marble Cake

Impressive strawberry marble cake filled and topped with cream cheese frosting and fresh strawberries - perfect for parties!
Ingredients:
  • 8 whole fresh strawberries, hulled
  • 1 teaspoon baking soda
  • 2 cups white sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs, separated, divided
  • 1 teaspoon pure vanilla extract
  • 1 cup buttermilk
  • 1 ounce red food coloring, or to taste
  • 4 cups confectioners' sugar
  • 1 (8 ounce) package cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 3 tablespoons milk
  • 2 teaspoons strawberry extract
  • 0.5 teaspoon pure vanilla extract
  • 1 drop red food coloring, or to taste
  • 1 cup sliced fresh strawberries, or as needed
Instructions:
  • Preheat the oven to 350°F (175°C). Line the bottoms of three 8-inch cake pans with parchment paper, then grease and flour the sides.
  • Blend fresh strawberries until smooth and set aside.
  • Combine flour, baking soda, and salt in a bowl. In a large bowl, cream sugar and butter with an electric mixer until fluffy. Mix in egg yolks one at a time, followed by vanilla extract. Alternate adding flour mixture and buttermilk, mixing well after each addition.
  • Using an electric mixer, whip egg whites in a large bowl until stiff peaks form, then gently fold them into the batter.
  • Transfer half of the batter to a medium bowl and reserve. Stir in pureed strawberries and food coloring into the remaining batter until well combined.
  • Divide the batters evenly among the cake pans, layering red and white batters alternately.
  • Bake in the preheated oven for about 30 minutes until a toothpick inserted into the center of each layer comes out clean. Run a spatula along the edges of the pans, then cool for 15 minutes, remove cakes from pans, peel off paper, and cool completely on wire racks.
  • Combine confectioners' sugar, cream cheese, butter, milk, strawberry extract, vanilla extract, and food coloring in a bowl. Allow the mixture to rest for 15 to 30 minutes while the cakes cool.
  • Spread a generous layer of frosting on the bottom cooled cake and arrange half of the sliced strawberries evenly on top. Repeat this process for the second cake layer. Place the top layer on top and frost the top and sides, ensuring that there are no visible strawberries peeking through the layers.
