Fresh Tomato Sauce

Quick and flavorful homemade tomato sauce bursting with fresh herbs!
Ingredients:
  • 1 can (28 oz) Muir Glen™ organic whole peeled tomatoes with basil, drained
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1 tablespoon chopped fresh parsley or 1 teaspoon parsley flakes
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon olive or vegetable oil
  • 6 medium tomatoes, diced (4 1/2 cups)
  • 3/4 cup kalamata or ripe olives, pitted, cut in half
  • 1 tablespoon capers, if desired
Instructions:
  • Combine all ingredients, excluding fresh tomatoes, olives, and capers, in a food processor or blender. Blend until smooth.
  • Transfer the tomato mixture from the food processor to a bowl. Gently incorporate fresh tomatoes, olives, and capers. Use the sauce promptly or store it covered in the refrigerator for up to 2 days.
