Experience the joy of making and savoring wholemeal pasta with this simple homemade recipe.
Ingredients:
  • 187.50 ml wholemeal plain flour
  • 187.50 ml plain flour
  • 3 eggs
  • plain flour, for dusting
Instructions:
  • Sift flours into a bowl or onto a flat surface, making sure to include any husks. Mix well and create a well in the center. Add eggs and gradually blend with flour using a fork until dough forms. Transfer dough to a lightly floured surface and knead for 5 minutes until it becomes smooth and elastic.
  • Take the dough and divide it into 4 equal portions. Wrap 3 portions in plastic wrap and set aside. With the remaining portion, flatten it using the palms of your hands until it is 2cm thick. Dust the dough with flour. Set your pasta machine to the thickest setting. Feed the dough through the machine while turning the handle. Fold each short end of the dough into the center to form a smaller rectangle. Repeat this process twice.
  • Adjust machine rollers to a narrower setting. Dust dough with flour and pass through machine until it is 1.5mm thick. Gently fold pasta, dust with flour, and store under a damp tea towel until needed. Repeat the process with the rest of the dough portions.
